1. What is the "default" exchange.

2. How important is it to select the exchange that a stock symbol (instrument) is listed on?

- the meaning of the default exchange is dependent on the actual provider
- I suggest adding instrument with Default exchange and (!) the exchange it's traded on. This is NT convention for all predefined stocks.
