For some reason, NT is saving the log file onto our server and using gigs of space. Is there a way to keep this from happening?

I'm not sure what you mean.
1) The only log/trace files NT creates are logs in <install>\log and traces in <install>\trace. If you have installed NT on your local machine, then log/traces are created on your local machine.
2) Most unlikely log/trace files would ever be 1 GB or more.
3) What are the names of the files created on your server? In which directory?
